Processing Methods
Three Indonesian traditions.
-
Wet-Hulled (Giling Basah)
The classic Indonesian method, unique to Sumatra. Parchment removed at 30–35% moisture. Produces the heavy body, low acidity and earthy notes Indonesia is famous for.
-
Fully Washed
Used in Java estates and Bali. Clean, bright cup. Mucilage removed by fermentation, beans washed and sun-dried. Best for buyers seeking clarity and acidity.
-
Natural / Dry
Whole cherry sun-dried on raised beds. Fruit-forward, sweet cup with body. Limited availability — typically Bajawa and select Bali Kintamani lots.
